Perfectly Crispy Grilled Cheese & Veggie Hellmann’s Strangewich
Try this unexpectedly perfect grilled cheese with Hellmann's or Best Foods Mayonnaise, whole grains and healthy veggies.
Grilled cheese is known as a delicious, universal comfort food, but not often top of mind as a particularly “nutritious” meal. This Perfectly Crispy Grilled Cheese & Veggie Strangewich is a clever example of making some simple tweaks like swapping out butter for Hellmann’s® or Best Foods® Real Mayonnaise, for a crispy, delicious meal. Plus, with Hellmann’s®, you know you’re getting cage-free eggs and responsibly sourced oils.
Serves: 1 l Prep Time: 5 min l Cook Time: 5 min
2 slices crusty whole grain bread
1 oz. sliced low fat white cheddar cheese
1 cup sliced roasted vegetables or grilled vegetables (sliced eggplant, peppers, zucchini, yellow squash and onions)
Spread one slice of bread with Hellmann's® or Best Foods® Real Mayonnaise. Place bread mayonnaise-side-down into hot skillet; add cheese and vegetables.
Spread other slice of bread with mayonnaise and place mayonnaise-side-up on top of vegetables.
Cook until lightly browned on one side. Flip over and cook until cheese is melted.
TIP: To roast or grill vegetables, preheat oven or grill to 400°. Brush veggies with oil and season with salt and pepper. Roast or grill, turning as needed, until golden and tender. Toss with chopped fresh herbs and a squeeze of lemon juice.
